Peel the onions and cut in thin rings. Peel Potatoes or Carrots and cut in small pieces.

Wash the pumpkin, cut off the stem. Part the fruit unpeeled with a big knife, take away the seeds and inner parts. Then cut in small pieces.


Put the butter in a big wide pot. Add the onion rings and stew. Then add the potatoes or carrots. Roast all for some time. Add the pumpkin and roast also. Finally add the broth and some parsley.

Let the soup boil slowly for about one hour. When the pieces are soft pass the soup through a sieve. Add the cream and seasoning: nutmeg and cayenne pepper.

Serve with roasted shrimps or chicken meat, and baguette.
